Chicken Teriyaki with Mixed Vegetables

For the Chicken Teriyaki:
2 chicken fillets, cut into strips or equal pieces
Salt and pepper to taste
1 tablespoon vegetable oil
1 tablespoon sesame oil (optional, for extra) flavor)
For the Teriyaki sauce:
1/4 cup soybeans
1/4 cup water
2 tablespoons brown sugar (or more to your taste)
2 tablespoons honey (or more to your taste)
2 cloves of garlic. chopped
1 tablespoon fresh ginger, chopped
1 tablespoon corn (mixed with 1 tablespoon water to make a paste)
For mixed vegetables:
1 red pepper, chopped
1 green pepper, chopped
1 medium carrot, julienned or minced meat
1 small broccoli, florets cut
1/2 cup snow peas or snow peas
Garnish:
Sesame seeds
Chopped green onions

  1. Prepare the chicken: Season the chicken pieces with salt and spices pool. .
    Heat the vegetable oil and sesame oil (if using) in a large skillet or wok over medium heat.
    Add the chicken and cook for 6-8 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

  3. Cook the vegetables: Add some oil to the same pan or a separate pan and fry the vegetables. Start with carrots and broccoli because they take longer to cook, then add peppers and peas. Cook for 3-4 minutes until the vegetables are softened but still soft.
  4. Combine chicken and vegetables: Return cooked chicken to pan with vegetables. Pour the teriyaki sauce over and stir to combine. Cook for another 1-2 minutes so that everything is heated through and coated with the sauce.
  5. Serving size: Serve the teriyaki chicken with hot mixed vegetables. Add sesame seeds and green onion.
