Flaky Puff Pastry Triangles

For the puff pastry flour:
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup salted butter, cooled and cut into small pieces
1/2 cup water

For the filling (optional):
1 cup canned fruit (such as apricots, raspberries, or strawberries)
OR
1 cup cream cheese

For the egg wash:
1 egg, beaten
1 tablespoon water

  1. Prepare the puff pastry:

Mix flour and salt in mixing bowl.
Add butter to the flour mixture. Use breadcrumbs or your fingers to cut the butter into the flour until the mixture resembles small flakes and you are left with large pea chunks.
Gradually add the ice water, one tablespoon at a time, and stir with a whisk until the dough begins to come together. You may not need all the water.
Place the dough on a lightly floured surface and shape into a rectangle. Cover it with plastic wrap and put it in the refrigerator for 30 minutes.

Divide the flour into three like a letter. Turn it 90 degrees and rotate it to add a long rectangle.
Add three more. Wrap the dough in plastic wrap, then put it in the refrigerator for 25 minutes. Repeat this rolling and folding process twice, letting the dough cool for 30 minutes between each movement.

  1. Prepare the filling (if using): If you are using the filling, prepare it while the dough is cooling. Pour fruit preserves or cream cheese flavoring into a small bowl and set aside.
  2. Prepare and fill the triangles: Preheat the oven to 200°C. Line a baking tray with baking paper.
    Roll out the chilled dough into a large rectangle, about 1/4 inch wide. Use a sharp knife or pizza cutter to cut the dough into squares approximately 10 x 10 cm.
    Place a small spoonful of filling in the center of each square (if using). Fold each square into a triangle and press all corners to seal. Use a fork to trim the edges to get a smooth surface.
  3. Make the egg wash: To make the egg wash, mix the eggs and water in a small bowl.
    Brush the top of the puff pastry triangle with egg white to obtain a golden and shiny appearance.
  4. To prepare the puff pastry triangles: Place the triangles on the prepared baking tray, leaving space between them.
    Bake in the preheated oven for 15-20 minutes or until the dough is golden and brown.
  5. Serving: Serve the puff pastry hot or at room temperature.
    It can be eaten plain or by sprinkling powdered sugar on it to add flavor. Tip: In order for the puff pastry to reach the perfect consistency, make sure the butter and water are very cold.
    If the dough is too hot, place it in the refrigerator for a few minutes before continuing to work on it.
    These puff pastry triangles are flexible and can be filled with equally delicious ingredients like cheese, ham or spinach and feta.
