OVEN SWEET AND SOUR CHICKEN

4 boneless, skinless chicken breasts, cut into 1 inch pieces
1 cup cornstarch
2 large eggs
1/4 cup vegetable oil
1/2 cup granulated sugar
1 /4 cups ketchup
1/2 cup apple cider vinegar
2 tbsp. soy sauce
1 tablespoon. garlic powder
1/2 tsp. sea ​​salt


Preheat your oven to 325°F (163°C) and line a 13×9-inch baking dish with parchment paper. Leave it nearby.Season the chicken breast pieces with salt and also pepper..
Put cornstarch in a large Ziploc bag and add the chicken breast pieces. Close the bag and shake to coat the chicken evenly with the cornstarch.
In a shallow bowl, beat two large eggs.
Heat vegetable oil in a pan over medium-high heat until boiling.Dip each cornstarch-coated chicken piece into the beaten egg until evenly coated.
Fry the coated chicken pieces in a pan until golden brown. and transfer it to a baking dish.
In a medium bowl, mix granulated sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt. Mix these ingredients together until combined.Pour the sweet and sour sauce over the chicken pieces in the baking tray.
Roast the chicken in the preheated oven for about 1 hour, making sure to stir the chicken halfway through cooking to ensure coating and even cooking.

Once the chicken is cooked and the sauce thickens, remove the chicken from the oven.
