Here’s a simple recipe for flourless pancakes:

  • 2 ripe bananas
  • 2 eggs
  • Optional: 1/4 teaspoon baking powder (for added fluffiness)
  • Toppings optional: maple syrup, berries, nut butter, etc.
  1. Mash the banana:
    Peel the banana and put it in a bowl until smooth.
  2. Beat eggs:
    In another bowl, beat eggs.
  3. Mix:
    Add the beaten eggs to the mashed banana and mix until combined. If using baking powder, add it immediately and mix well.
  4. Cooking:
    Heat a non-stick pan or griddle over medium heat.Pour a small amount of batter into the pan to form pancakes.
  5. Cook until golden brown:
