Zucchini Patties

2 large zucchinis (approximately 300 g)

1 onion or carrot

1 clove of garlic (optional)

Spices: parsley, chives, basil or coriander

1 egg

1 tsp flour 2 tablespoons liquid cream (classic or vegetable) Salt pepper paprika, curry, Espelette pepper etc… Butter/oil for frying

Wash, dry and grate your courgettes. Put them in a clean tea towel and squeeze well to remove the juice

Finely chop the onion or garlic and parsley

Mix with the grated zucchini, then add the cream and whole eggs, stir, then stir in the flour, salt, pepper and herbs, stir

20 g oil and heat some sunflower oil in a pan and collect small pieces of the mixture, arrange them in the form of crepes and fry for 3 minutes on each side until you get crepes. It is dark brown. Place your crepe on a baking tray and keep very warm
