Drizzle beer over the beef roast

1-4 pound beef chuck roast
Salt and pepper to taste
2 tablespoons of olive oil
1 onion, sliced
3 cloves of garlic, chopped
2/3 cup beef stock
Stout or porter beer, as preferred
2 bay leaves
2 sprigs fresh thyme
2 carrots, peeled and chopped
2 celery, diced
2 teaspoons corn (optional)

Preparation of the beef:

Season the roast beef generously on both sides with salt and pepper.
Heat the olive oil in a large Dutch oven or pan over medium heat. Sear the steaks until golden brown, 3 to 4 minutes on each side. This helps lock in the juices and create a delicious crust.
Prepare the pot:
Transfer the beef roast to the large roasting pan or slow cooker.
Surround the roast with sliced onion and minced garlic.
Pour in beef stock and beer, making sure the water covers the rim between the rims.
Add bay leaves and fresh thyme sprigs for extra flavor.
Sprinkle in carrots and celery around the roast.
Cook the roast:
If using the slow cooker, cook on low for 8 to 10 hours or on high for 4 to 6 hours until the meat is cooked through.
If using a casserole dish, cover tightly with aluminum foil and roast in an oven preheated to 160°C (350°F) for 3 to 4 hours or until cooked through.
Optional; Thicken the sauce
Once the roast is cooked, transfer the cooking liquid to a saucepan.
In a small bowl, mix the corn with a few tablespoons of cold water to make a paste.
Gradually whisk the slurry into the simmering cooking liquid.
Cook, stirring constantly, until the sauce reaches your desired consistency.
Serve and enjoy:

  1. MAKE SURE TO USE A GREA DARK EUROPEN BEER FOR POURING ON ROAST – OR USE IT N STEW! IVE OT A COUPLE BOTTLES OF GUINESS HERE AND ITS ONLY USED FOR ENHANCING STEWS ETC. TRY IT – YOU WILL LOVE IT.
