Blueberry Biscuits

2 cups all-purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
1/2 teaspoon salt
1/2 cup unsalted butter, cooled and cut into small pieces
3/4 cup cold whole milk
1 cup fresh blueberries
2 tablespoons heavy butter
Additional sugar for sprinkling, optional

  1. Preheat your oven to 220°C (425°F) and line a baking tray with baking paper.
  2. In a large bowl, combine 2 cups flour, baking powder, sugar and salt.
  3. Cut in the butter with a fork or your fingers until the mixture resembles fine crumbs.
  4. Slowly add the milk and mix until the dough comes together. Be careful not to overdo it.
  5. Add the blueberries slowly and be careful not to crush it while kneading.
  6. Turn the dough out onto a lightly floured surface and knead very gently a few times until it sticks together.
  7. Roll out the dough into a 1-inch circle. Using a cookie cutter or cup, cut out cookies and place on the prepared baking sheet.
  8. Cover the top of the cookies with whipped cream and sprinkle some sugar on top if you want a little more flavor.
  9. Bake for 15-18 minutes or until top is golden brown.
  10. Let the cookies cool slightly on a rack before serving.

  • For a spicier taste, add pure lemon zest to blue the bread.
  • If blue is not in season, you can replace it with a cool (not cold) blue, bearing in mind that it may stain a little.
  • For those with a sweet tooth, some powdered sugar can be sprinkled on the slightly cooled cookies.
  • Remember that cold butter is the key to easy cookies and you have to work quickly to keep the dough cool. If the dough is too hot, let it sit in the refrigerator for a few minutes before continuing.
  • Always handle your dough with love, but also handle it gently; Too much processing will result in tough cookies, and we want them to be as soft as a heart warmed by the morning sun.
