Cajun Fried Shrimp

Ingredients:

Crispy Shrimp:
• 12 large raw shrimp, peeled but with tails attached
• Half cup vegetable oil
• One cup all-purpose flour
• ½ teaspoon fresh lemon peel
• Half teaspoon salt


• 1 1/2 teaspoon Cajun Seasoning
• 1 large egg
• 1 tablespoon milk
• 1 cup panko bread crumbs
For Cajun dressing:
• Half cup mayonnaise
• 2 spoon sour cream
1 spoon ketchup
• 1 teaspoon Cajun seasoning


Instructions:


Cajun sauce
• Combine mayonnaise, sour cream, ketchup and Cajun seasoning in a bowl. Whisk well and set aside while preparing shrimp.
Crispy Cajun Shrimp


• Combine flour, salt, lemon zest and Cajun seasoning in a bowl. Stir with a fork to mix well. Next, crack an egg into a bowl, add milk and beat well with a fork.Next, place the panko on a plate. Arrange the stations in a row starting with flour, then eggs, then panko. When done, place a clean plate at the end of the shrimp line.
• Use your left hand to press the shrimp into the dough. Transfer it to your right hand and dip it into the egg, then into the panko.Press the panko into the shrimp until evenly coated. Arrange shrimp on a clean plate; Repeat with remaining shrimp. Keeping your hands dry will help reduce stickiness and make the baking process more efficient.
• Pour oil into an iron pan. There should be an inch of oil at the bottom.If you are using a smaller or larger pan, adjust the quantities accordingly. Preheat the oven with oil over high heat. The oil will sizzle if you sprinkle some breadcrumbs on it when the oil is cooked. Don’t add shrimp too early.
• Use tongs to place the shrimp into the pan.Try to keep them from touching each other so the pan isn’t too crowded and the shrimp can cook evenly.
