How to make zucchini pies, a delicious and healthy recipe

5 eggs
1 large onion
5 shredded zucchini
2 large tomatoes
Parsley and chopped coriander
Green pepper, spicy or sweet (preferred)
Salt, black pepper and cumin

Cut onion and fry in oil until golden.Cut the tomatoes and green peppers and add them to the onions. Stir for just two minutes so the tomatoes don’t wilt. Then remove from heat.
Add parsley and cilantro and stir well. Add salt, black pepper and cumin.Add eggs and stir. Then add the shredded zucchini and mix well until the mixture becomes thick. You can add a spoonful of flour to adjust the consistency.
Line the cupcake tins with a muffin tin and use a spoon to fill them with the mixture.
If you don’t have a muffin tin, you can use a regular baking dish.Bake in the preheated oven for about half an hour until cooked through and the top is golden brown.
