Chicken marinade:
2 chicken breasts, cut in half
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion-garlic powder
1 teaspoon Italian seasoning

Tomatoes –
Cherry tomatoes, halved or quartered
1 tablespoon olive oil
Fresh basil leaves, chopped
Salt and pepper
Basil Pesto
Mozzarella slices

Chicken Marinade –
In a small bowl, mix olive oil, onion powder, garlic powder, Italian seasoning and salt. and pepper.
Use a meat mallet to flatten the thick part of the breast. Brush chicken breasts with marinade.
Tomatoes –
Mix tomatoes with olive oil, chopped basil and season with salt and pepper.
Chicken and parts –

Heat 2 tablespoons of butter in a frying pan, fry the chicken until golden on both sides (no need to cook as the chicken will continue to cook in the oven) and transfer to a baking tray coated with cooking spray eat. Decorate each chicken. with mozzarella slices and bake in the oven at 200C/400F for about 20 minutes or until the chicken is cooked through.Cooking time may vary depending on the thickness of your chicken breasts.
Remove from oven. Sprinkle each chicken with about 3 tablespoons of pesto, a tablespoon of tomato, and some fresh pepper. Serve immediately.
