Crepes Recipe

1 cup all-purpose flour
2 large eggs
1 1/4 cups milk
1/4 cup water
2 tablespoons melted butter
1 tablespoon sugar
1/4 spoon of salt
Additional oil or cooking butter

  1. Prepare the dough:
    Mix flour, eggs, milk, water, melted butter, sugar (if making sweet crepes) and salt in a blender or mixing bowl. Mix or whisk until the dough is smooth. Leave it to rest for 25 minutes. This allows the dough to absorb water better and gives it a smoother texture.
  2. Heat the pan:
    Heat the frying pan or non-stick pan over medium heat. Add some oil or butter and stir to coat the pan.
  3. Cook the pancakes:
    Pour a small amount of batter (about 1/4 cup) into the center of the hot pan.
    Quickly remove the pan from the heat and rotate it so that the thin crust spreads over the bottom.
  4. Cook on both sides:
    Cook the carcass for 1-2 minutes until the edges begin to rise and the bottom is light golden brown. Remove the crepe and cook the other side for 1-2 minutes.
  5. Repeat:
    Continue this process with the rest of the dough, adding a little oil or butter to the pan for each pancake.
  6. Serving:
    Serve hot with your favorite ingredients. Popular options include Nutella, fresh fruit, butter, jam or a pinch of sugar and a squeeze of lemon for a nice texture. You can top it with ham and cheese, roasted vegetables, or cheese and smoked salmon for extra flavor.
